5 Days of Gifts!..Day 5 Banana Bread

My last gift idea for the week is the classic banana bread.  I don’t know many people who don’t love banana bread and this recipe is tried and true.  My Mom has been making it as long as I can remember and it’s one of my favorites.  Give this gift to someone you just want to say thank you to.  They will love it.

1 3/4 cup flour
2/3 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup mashed banana (2-3 bananas, very ripe)
1/3 cup butter, softened
2 tbsp milk
2 eggs
1/4 cup chopped walnuts (optional)

Yields 1 loaf bread

Preheat the oven to 350 degrees.

To mash the bananas, place the ripe bananas in a bowl and mash with a fork.   

In a large bowl mix together the flour, sugar, baking soda, baking powder, and salt.


Add in the banana, butter, and milk and mix well.   

Add in the eggs and mix well.  If you wanted to add nuts you would add them in after the eggs are mixed in.


Pour the batter into a greased loaf pan and bake for 1 hour or until a toothpick inserted into the bread comes out clean.

I found these great Christmas baking loaf pans at Michaels.  They don’t hold as much batter as a standard loaf pan so I actually got two loafs out of the batter.  These small loaf pans only bake for 28-30 minutes.
