Snowball Cookies


I LOVE these cookies!  Many people call them Mexican Wedding Cookies as well, but it doesn’t matter what you call them because they are delicious!  I love the nutty flavor and sweet outside of the cookies.  Definitely make these for your cookie swap this year!  Easy and so tasty!

1 cup (2 sticks) salted butter, at room temperature
1/2 cup powdered sugar, plus an additional 2 cups
1 tsp vanilla extract
2 1/4 cups flour
1/4 tsp salt
3/4 cup finely chopped walnuts or pecans

Preheat the oven to 400 degrees.
Cream together the butter, sugar, and vanilla.  

To finely chop the nuts I pulse them in a mini chopper.  You could also do this with a knife, but it will take some time.    

Add in the nuts, flour, and salt to the butter and mix well.  

Form the dough into 1 inch balls by pressing and rolling the dough in your hands.  

Bake for 12 minutes, until the cookies are set, but not browned.  

Let the cookies cool for 5 minutes, then roll them in powdered sugar.  


Let the cookies cool completely and then roll in powdered sugar again.
