Spicy Sausage Bites

I thought these would be the perfect treat for tonight’s Packer game, and yup, I was right.  You really can’t go wrong with hot sausage, pepper jack cheese, and crescent dough though!

This quick and easy recipe is a perfect appetizer for your next holiday party as well!  And with just 3 ingredients you can’t beat it.

I also love this recipe because it can be personalized to your taste.  Don’t love spicy things?  No problem, use sweet sausage and cheddar cheese or any other combo you can think of!  I really wanted to make these with half chorizo sausage but Wegmans didn’t have any ughh.  Still loved them though!

1 lb hot Italian sausage patties or links
2 cups shredded pepper jack cheese
1 package Pillsbury crescent dough sheet (if you can’t find the sheet the crescent roll dough will work too, just press together the seams)
Flour for dusting

Yields 80

Preheat the oven to 375 degrees.

Cut the links open if using links and break up the sausage into small pieces.  Place in a mixing bowl.  Add in the cheese, and using your hands, mix well.

Lightly dust a large cutting board with flour and spread out the crescent dough on the board.  Stretch out the dough to form a nice rectangle.

Using a pizza wheel, cut the dough into tiny 1/4 inch squares.  The pizza wheel makes quick work of this!

Sprinkle another dusting of flour over the cut squares to help them not stick together. Separate the dough pieces and add to the sausage mixture.   Using your hands, mix well.

Take a 1/2 tablespoon of the mixture and lightly roll into a ball in your hands.  Form about 80 balls and place on 2 parchment lined baking sheets.

Bake for approximately 15 minutes, until the crescent dough is golden brown.
